Mousse without the fuss! The easiest healthy mousse cake that's creamy, silky, velvety, and everything you'd expect from mousse but it's vegan, dairy free, no bake, high-protein, and only made of 7 ingredients!
This one is what you'd call a low-effort, high-reward recipe. With one secret ingredient, you can achieve this velvety smooth mousse and pack in a big punch of plant protein simultaneously and that is - silken tofu! Don't write it off until you try it, you cannot taste the tofu in this cake at all!
For setting, instead of using gelatin, which is made from the skins and bones of cows, pigs, and/or fish, we will use agar agar, which is made from algae. There are several perks in using agar agar even if you're not vegan - first of all, it sets super fast! This cake took barely 2 hours in the fridge to completely set while regular mouse cakes require 6+ hours; secondly, agar agar will not melt under room temperature, so your cake will be able to hold its shape for a much longer time on the table.
INGREDIENTS:
150 gram biscoff cookies or other cookies of choice
50 gram vegan butter
15 gram ceremonial grade matcha powder
350 gram silken tofu
4 tablespoon monk fruit extract powder
2 1/2 teaspoon agar agar powder
1/2 cup water
Fresh strawberries as needed
TO MAKE:
- Transfer the biscoff into a kitchen processor and blend into a very fine crumb, add in the melted butter and mix evenly;
- Press the cookie mixture at the bottom of your mold or cake ring, firmly into one layer;
- Cut some of the strawberries in half and place them around the edge of the mold, fill the middle with whole strawberries;
- Blend the silken tofu, monk fruit extract (or other sweetener) and matcha powder together, until very smooth;
- In a saucepan, add the agar agar powder to the cold water, stir to mix well, bring to a simmer, keep stirring in the process and it would become a very thick paste;
- Add the tofu matcha mixture to the pan and whisk to mix everything very well together;
- Pour the mixture into the cake mold over the strawberries, smooth out the top, let it cool down before transferring to the fridge;
- Chill in the fridge for at least 2 hours, when ready to serve, dust with more matcha powder (optional) and slice, enjoy!
