Make the iconic Korean street food Tteok Kkochi with rice paper when you can't find rice cakes! These sexy little treats are spicy, sweet, and cheesy in the best kind of way and the consistency is super similar to tteok, soft, chewy, and pillowy.
You've probably had or heard of Tteokbokki, which is a popular Korean street food that's made of stir-fried rice cakes in a gochujang based sauce. It's often served with fish cakes, boiled eggs, and scallions. And. Tteok Kkochi is basically tteokbokki on a stick, make them much easier to eat on the go and also my favorite way to eat!
It's really difficult to find good quality fresh tteok, Korean rice cakes where I live so I made this workaround that perfectly satisfies the cravings! It's also super cheap, easy, and quick to make, and of course naturally gluten free!
You can simply just roll the rice paper up and cut into little cylinders and keep them as plain "rice cakes" or, you can take them up a notch and stuff them with vegan cheese! I love when they're cooked the cheese just oozes out after your first bite.
INGREDIENTS:
12 rice paper
6 vegan mozzarella stick
Scallion and sesame for garnish
For the Sauce-
1 cup veggie stock
2-3 garlic cloves
1 tablespoon gochugaru
1 1/2 tablespoon gochujang
1 tablespoon brown sugar
1 tablespoon soy sauce
TO MAKE:
- Cut the vegan cheese sticks into suitable lengths;
- Quickly dip the rice paper into lukewarm water or quickly run it under running water;
- Place a piece of vegan cheese at the bottom, roll it up a few rounds, the fold in the two sides onto the center;
- Keep rolling up until you reach the end and seal it;
- Roll it between your palms to round the corners a little bit;
- Repeat and finish rolling all the rice paper
- Thread them onto skewers;
- In a sauce pan, add all the sauce ingredients and bring to a simmer;
- Transfer the skewers into the pan, flip them occasionally and baste them with the sauce;
- Keep cooking over low heat and let the sauce thicken;
- Once it's thickened to your preferred consistency, take off heat, garnish and enjoy!
