The jiggliest jiggly bunny treats you can make for Easter! These are so cute and at the same time, so easy to make, you only need 3 main ingredients! Plus whatever color you like to use. They are dairy free, gluten free, sugar free, and made without gelatin or even agar agar!
If there ever is a food where it's not only appropriate to play with your food but a MUST, it'd be this one! ^^ These bunny shaped coconut jellies are so fun to make, play with, and eat! They are creamy, tender, and sooo jiggly.
Instead of gelatin or agar agar, this jelly is made from arrowroot powder plus coconut milk, that's it, that's the two main ingredients for the structure plus any sweeteners and colorings you like. If you can't find arrowroot powder, you can also use cornstarch! It'll work the same I just personally prefer arrowroot for it's a bit more wholesome and contains more fiber.
For sweetener choices, any POWER form you like would work just fine! But I don't recommend any liquid or "wet" ingredients to the mixture because it can very easily disturb the balance and result in the jelly never setting no matter how long you refrigerate it.
INGREDIENTS:
5 tablespoon arrowroot powder
400 ml full fat canned coconut milk
3 - 5 tablespoon monk fruit extract, depending on your preferred level of sweetness
2 teaspoon freeze dried strawberry powder
1 1/2 teaspoon ceremonial grade matcha powder
TO MAKE:
- Sift the arrowroot powder and monk fruit powder into the coconut milk, stir to make sure everything is completely dissolved and there's no lump, if you are unsure, pass the mixture through a sift once;
- Divide the mixture into three portions, add the strawberry powder to one portion and matcha powder to another, stir to mix well;
- Pour one portion of the mixture into a saucepan over medium heat, stir frequently, soon you'll see little clumps start to form at the bottom, keep stirring to mix everything and let the mixture continue to thicken;
- Cook the mixture for 15 minutes or so, the texture should be thick and almost "solid" afterwards, it should be able to stay on your spoon for a few seconds without dropping;
- Once it's ready, transfer into your mold, and repeat the same process with the other two portions of the mixture;
- Let the mixture cool down, then transfer into the fridge and let them set for at least 4 hours;
- Once they are fully set, de-mold, and serve chilled, enjoy!
