New obsession alert for all my peanut butter lovers!! These little mochi bites are packed with rich, creamy, peanut butter taste and lots of plant protein, naturally vegan and gluten-free. They are soft, chewy, stretchy, and, the most important thing for Asian desserts - not too sweet!
These mochi bites are super easy to make, only call for 5 ingredients and you won't even need a microwave or steamer! I know it's very common in most mochi recipes you see that the mixture is either steamed or microwaved, but, hear me out, you could actually just - heat it on the stove! It makes the process so much simpler and more straightforward.
And of course, we can have our desserts and eat it too ;) while getting in so much protein! The mochi plus the cacao peanut butter dipping have over 30 grams of plant protein in them! I used my forever favorite peanut butter powder from PB Fit, the powder form makes it so versatile, you can add it in to anything! Smoothies, cakes, cookies, pancakes... And just add water, you can turn it into actual creamy, rich, smooth peanut butter! It's like magic.
To make it even better, the PB Fit peanut butter powder has 87% LESS FAT than traditional peanut butter and only about 1/3 of the calories. You can use my code ELLE15 at checkout on their website for 15% off!
INGREDIENTS:
100 gram glutinous rice flour, plus more for dusting
20 gram arrowroot powder or cornstarch
30 gram peanut butter powder from PBFit (use "ELLE15" for 15% off!)
220 gram soy milk
10 gram avocado oil
Chopped peanuts for serving
For the chocolate peanut butter dip -
2 tablespoon PB Fit powder
1 tabblespoon cacao powder
2 tablespoon water
TO MAKE:
- In a pan, mix together all the dry ingredients, then slowly pour in the soy milk and avocado oil, stir till it's completely smooth and silky, no lumps;
- Heat the mixture over medium-low heat on the stove, while keep stirring;
- The mixture will start to thicken, lumps will form, keep stirring and folding, and eventually form a ball of dough;
- Take it off heat, let it cool a little but don't wait too long, as soon as you can handle the dough, start kneading and stretching it;
- It helps to wear some food-grade gloves to prevent sticking! Repeat stretching out the dough and folding, until the dough becomes smooth and shiny;
- In a dry pan, toast some glutinous rice flour over low heat for 5 minutes;
- Divide the dough into bite-size portions, roll out each portion into balls;
- Roll each ball in the toasted glutinous rice flour to prevent them from sticking to each other;
- In another bowl, mix together all the dip ingredients;
- Serve the mochi bites with the dip and chopped peanuts, enjoy!
