Turn your chickpea water, or aquafaba, into these easy three-ingredient vegan meringue cookies! They are lighter than air, fluffy, sweet, and have that satisfying crunchy exterior, it's like eating crispy sweet clouds!
Aquafaba truly is magic, the water that comes with your canned chickpeas is actually full of protein, which is exactly why it can act in a similar way as egg white when it's whipped! The protein in the liquid is what provides that structure for the fluffy peaks and you can make all kinds of meringue with it.
My favorite is meringue kiss cookies but this time I added a little more twist to them and made them into little Miffy bunny shapes! Cuter food just tastes better right?
Since the ingredients are so simple - only 3, it's all in the whipping for this recipe. Use your most trusted mixer and take your time, it needs to be whipped to a stiff peak, try flipping it over, it should stay on your spoon without falling! If you're too afraid to try flipping it over your head then it's not ready ;)
INGREDIENTS:
200 ml aquafaba, liquid from one can of chickpea
1 teaspoon cream of tar tar
5-6 tablespoon caster sugar
TO MAKE:
- Preheat oven to 200°F;
- Drain your can (or bag) of chickpeas and reserve the liquid, measure 200 ml, transfer to the bowl of your mixer;
- Star whisking on high, when it becomes foamy and white, slowly add in the cream of tartar;
- Once it starts to become fluffy and peaks are starting to form, add in the sugar one tablespoon at a time;
- Whisk until you achieve a stiff peak that won't fall when you spoon some up and flip it over, it took me 8 minutes in my mixer, your time may vary based on your appliance;
- Transfer into a pipping bag, pip onto a lined baking sheet into your preferred shapes;
- Bake for 1 hour;
- Please note, baking time depends on the size of your meringue cookies, mine were quite small so they were crispy after only 1 hour, if you're making bigger, thicker ones, or meringue nests, it'll take longer, 1 1/2 hour or even 2 hours;
- Once they're baked and the center is no longer wet, take them out and let the cookies cool on a wire rack;
- Optional, decorate with edible marker;
- Enjoy!
