A super easy sushi sandwich anyone can make even if you're not familiar with onigirazu or sushi making in general! This easy hack onigirazu, aka sushi sandwich or rice sandwich, is filled with a savory, refreshing, and creamy vegan "crab" salad made from young jackfruit and loaded with fresh, colorful veggies.
If you love onigirazu but are not very confident in your nori wrapping skills yet - worry not, I got you! This easy fold hack is literally my all-time fave cooking hack and is pretty much the only one that sticks and I still use it all the time. You've probably seen this similar folding method with tortilla wraps trend first but it also works perfectly with nori!
Simply divide the nori sheet into four equal squares, create a cut from the middle of one edge to the center, then place your fillings onto the four squares and fold! That's it! Cut it in half and you'll have a perfectly wrapped onigirazu or sushi sandwich with no sweat.
For fillings, go wild, anything you like as long as it's not too watery! I wanted some ocean flavors in mine so I made a vegan "crab" salad using young jackfruit, which has a flaky, stringy, tender, and moist texture that mimics crab meat so perfectly!
INGREDIENTS:
*makes two onigirazu
2 nori sheet
1 cup cooked sushi rice
1 cucumber, sliced
1 small carrot, julienned
1 avocado
4 lettuce leaves
For the "crab" salad -
1 can young jackfruit, 10 oz drained
1/2 tablespoon miso paste
1 tablespoon vegan fish sauce or soy sauce
1 tablespoon rice vinegar
2 slices of beetroot
2 cup warm water
1 teaspoon old bay seasoning
4 tablespoon chopped chive
2-3 tablespoon homemade silken tofu mayo
1 tablespoon furikake flakes
TO MAKE:
- Drain the jackfruit, set asdie;
- In a pot, combine miso, vegan fish sauce, vinegar, old bay seasoning, and beetroot slices, slowly pour in the warm water while stirring to dissolve the miso paste;
- Transfer onto your stovetop, add in the jackfruit, bring to a gentle boil and let it simmer for 10 minutes;
- Drain the marinade and let the jackfruit cool down;
- Tear the jackfruit chunks into shreds and roughly chop them, transfer to a plate and combine with chopped chive, homemade silken tofu mayo and furikake flakes, you can use storebought mayo ofc!
- Take one nori sheet and cut from the middle point of one edge to the center, place rice, lettuce and jackfruit crab salad, avocado, cucumber and carrot on each "square" of the nori sheet;
- Start folding one square onto the one next to it and following a clockwise direction, or counter clockwise whichever you're more comfortable with;
- Wrap the folded sandwich with cling wrap, cut diagonally in halves, enjoy!
