Golden crispy, sweet AND savory tots ready in under 30 minutes from scratch! These adorable bunny-shaped sweet potato tater tots are going to be your next favorite snack, side dish, picnic food, or lunch box addition... or just whenever you need an extra boost of serotonin.
I remember reading this somewhere, that tater tots are the best form of potatoes - they've got the golden crispy crust on the outside, yet still maintain the fluffy pillowy softness on the inside. I have to agree and the same can be said for this sweet potato version! But even better, because on top of the savory flavor, you also get the natural sweetness in the mix and sweet + savory is just an irresistible combo for me.
This recipe is super low fuss and easy, all you need is sweet potatoes, some spices, and some kind of starch - I used arrowroot powder, but cornstarch will work just as well. And I personally love Japanese sweet potatoes, which have a pale whiteish flesh instead of orange and they're much less watery and have a special aroma. But you can of course use any sweet potatoes you have!
And if you don't have an air fryer, you can make them in the oven but with a higher temperature and longer cooking time. I will include specifics in the written recipe below.
INGREDIENTS:
1 large sweet potato, about 1 lb
1/2 tablespoon arrowroot powder, or cornstarch
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon coriander
1/4 teaspoon smoked paprika
1/4 teaspoon salt
Oil spray for cooking
TO MAKE:
- Bring a large pot of water to boil, and par boil the sweet potato in whole for 40 - 50 minutes, or until it's still firm but can be easily pierced with a fork, adjust cooking time to the size of your sweet potato;
- Once boiled and cooled down, peel off the skin, and grate the sweet potato;
- Add all the ingredients (except the oil obv) to a mixing bowl and stir to mix evenly, the mixture should be soft enough that if you pick up a little and press, it should be able to stick together;
- Form the mixture into either regular tater tot shape or use whatever mold you like to make them into fun shapes!
- Spray on a little oil, air fry at 400°F for 10 - 15 minutes, flip, then for another 10 minutes, your cooking time might vary depending on your air fryer and the quantity you're cooking, so monitor them and adjust the time as you go;
- If you're cooking them in an oven, bake them at 410°F for 20 - 25 minutes, flip, then for another 20 minutes, monitor and adjust the time as they cook;
- They might be a tad bit soft in the middle when you just take them out of the air fryer but they will firm up as they cool down a little;
- Serve hot with your choice of dipping sauce, enjoy!
