I've loved frozen grapes growing up, there's something special about frozen grapes that no other fruits can compare except maybe frozen lychee and frozen logan. It's as if they go through some kind of magic in the freezer and literally turn into little mini popsicles, the texture is not frozen solid but instead, it's like shaved iced pressed inside the grape skin!
With only two simple steps we can put a fun spin on frozen grapes and turn them into a much healthier version of sour patch kids candies. They're generously dressed in lemon and lime juice, which provides the sour burst and then rolled in granulated "sugar". But instead of regular table sugar I used monk fruit extract - this is just my personal preference because I wanted to avoid any sugar rush or blood glucose level spikes but please feel free to stick to your regular granulated sugar.
A little more information on monk fruit, it is a plant native to southern China and northern Thailand. I remember seeing my grandparents making and drinking tea from dried monk fruit. In recent years, this fruit has caught the attention of the health world in the "western" countries and is turned into an extract, used as a sugar alternative. Monk fruit extract creates a sweet sensation 150 - 250 times stronger than table sugar yet it has zero carb, zero calorie, and does not raise blood glucose level.
