Remember the viral tortilla hack from last year? I used that wrapping technique but with nori sheet and made this super easy and flavorful sushi sandwich, or Onigirazu. It's an entire balanced meal in a handy wrap - carb, veggies, protein, and healthy fat, making it a perfect lunch or a power snack.
I'll admit, for most of the food trends I'd get intrigued, try them once and would never even think about them again. But not for this one! This is the only food trend that lasted in my cooking rotation and I make it for myself all the time. It is just such a convenient way to make a quick wrap with all kinds of different fillings. It's safe to say this is one of those life hacks I never knew I needed but not can't live without.
And here is a nori sheet version instead of tortilla. It's very beginner-friendly especially if you are not super comfortable rolling sushi or wrapping onigirazu yet! All you need to do is add your preferred filling and FOLD - 100% fail safe.
The fillings combo is highly adaptable of course, you can choose whatever your heart desires. For this one here I used sushi rice, homemade silken tofu mayo, sriracha, sticky teriyaki tofu, lettuce, carrots, chips, and avocado.
Feel free to change up the fillings but I highly recommend keeping your choice of chips in there! They add such a crunchy surprise that'll make your lunchtime extra delightful.

INGREDIENTS:
*this amount makes 4 onigirazu
2 cups cooked sushi rice
1 tablespoon sushi vinegar
4 nori sheets
2 avocado
1 carrot, shredded
Lettuce leaves
Chips of choice
Sriracha sauce
Homemade Silken Tofu Mayo, or vegan mayo of choice
For the Teriyaki Tofu -
1 14 oz block extra firm tofu
1 tablespoon tamari/soy sauce
1/2 tablespoon vegan mushroom oyster sauce
1 teaspoon rice vinegar
1/4 teaspoon brown sugar
Cooking oil
TO MAKE:
- Cook your rice according to package instruction, I used a rice cooker, once cooked, fluff the rice up with a spatulae and season with sushi vinegar;
- Drain and pat dry the tofu, slice into about 1/2 inch thick pieces;
- In a nonstick pan, coat the bottom with a thin layer of oil, pan fry the tofu pieces till golden crispy on both sides over medium heat, about 3-4 minutes per side;
- Meanwhile, mix together the sauce ingredients for the tofu, once tofu slices are fried golden, carefully pour in the sauce, quickly lower the heat to low, and continue to flip and turn the tofu pieces to coat both sides with the sauce;
- Let the sauce slowly thicken to desired consistency, keep flipping the tofu to glaze all sides evenly;
- When ready to assemble, take one piece of nori sheet, cut from the middle point of one edge to the center;
- Place one layer of rice on one quarter of the space, about 1/2 cup, add sriracha and silken tofu mayo;
- Add on the rest of the fillings to each quarter of the space;
- Start folding from where the cut is, fold 3 times until one square wrap is formed;
- Wrap the sandwich in cling wrap, slice diagonally in half, enjoy!
