Quick, easy, and completely NO HEAT lunch coming your way! This sandwich is so perfect for the summer season, it requires basically no cooking and is packed with different flavors and textures - creamy and savory from the white bean "tuna" mash, sweet and crunchy from the apples and grapes, nutty and earthy from the pecans.
The creation of this recipe was quite unexpected and funny. I was watching a baseball game one night with my partner (why else would I be watching sports lol) and a commercial came on from some crappy fast food chain, and there it was, in dreamy slow motion, a scoop of creamy turkey salad with pecan, apple, and grape pieces mixed in was being piled on a slice of toasted bread. I, was, hooked!
And the very next day I set out to recreate that salad sandwich with vegan ingredients and I'm proud to say it not only looks exactly like the commercial but also tastes fantastic! And no innocent lives were harmed or murdered in the making of this sandwich!

INGREDIENTS:
1 can white beans
1/2 red onion, chopped
1 small apple, chopped
1/3 cup seedless grapes, halved
4 celery stalks, sliced
1/4 cup pecans, chopped
1 tablespoon caper brine
1/2 teaspoon white pepper
1/2 cup homemade vegan mayo
1 tomato, sliced
1 avocado, sliced
2 small cucumbers, sliced
4 lettuce leaves
TO MAKE:
- Drain and rinse the white beans and transfer to a large bowl, mash with a potato masher, leaving some texture, not completely smooth;
- Add in the apples, grapes, celeries, pecans, caper brine, white pepper, and homemade vegan mayonnaise, stir to mix evenly;
- Assemble the sandwiches with lettuce, cucumber slices, 2 -3 scoops of the salad, tomato slices, and avocado
- Enjoy!
