It might not be Pride month right now but is there really ever a bad time to celebrate equality, diversity, and love while enjoying some festive rainbow-colored food? NEVER. So here it is, a refreshing and colorful rainbow vegan pizza with cheesy tofu spread and a beetroot falafel crust.
The crust is not just vibrant it's also super simple and healthy, it's gluten-free, high in plant protein, and much lower in carbs compared to regular pizza dough.
And for the toppings, this is a perfect chance for you to use up all kinds of scraps of vegetables you have in your fridge! Basically, anything goes but if you're trying for that rainbow color palette use as many colors as you could find, some good options would be tomatoes, carrots, yellow peppers, cucumber, avocado, purple cabbage, etc.

INGREDIENTS:
For the Crust -
1 can chickpea
1 medium beetroot
1/2 cup oat flour
1/2 cup rice flour
1 teaspoon garlic powder
1 tablespoon olive oil
Pinch of salt
For the toppings -
1/2 block silken tofu
1 lemon, juiced
1/2 tablespoon nutritional yeast
1/2 tablespoon canola oil
1 teaspoon garlic powder
1 cup cherry tomatoes
1 yellow bell pepper
1 carrot
1 cucumber
1 avocado
TO MAKE:
- Preheat oven to 400°F;
- Trim off the root of beet, wrap in aluminum foil, bake for 45-50 minutes till cooked through;
- Let the beet cool down enough to handle, then peel and cut into cubes;
- Transfer baked beet, chickpeas, garlic powder, olive oil, and salt to a food processor, blend till smooth, pour into a large bowl and add the rice flour and oat flour, mix till a dough forms;
- Roll out the dough into your preferred pizza shape on a piece of parchment paper, lower the oven to 395° and bake for 35 minutes;
- Meanwhile, prepare the toppings by blending the silken tofu, lemon juice, nutritional yeast, canola oil, and garlic powder till smooth, and cutting the veggies into prepferred shapes;
- Spread the pizza crust with the tofu cheese mixture and top with veggies. Enjoy!
