I love pancakes for breakfast but I always dread having to pour the batter, wait, flip, repeat, and over and over again and the whole process also takes a long time - probably not your running late gotta whip something up in no time and dash breakie choice.
But with this giant pancake pizza, we've got speedy on top of fluffy! Instead of having to pour and flip each one, just dump the whole batch in a nonstick pan and cook it as one big pancake in one go. I topped it with a vegan chocolate spread, banana, blueberries, pecans, and a handful of granola. The whole thing took me like 10 minutes from beginning to finish.

INGREDIENTS:
1/3 cup oat flour
1/4 ripe banana
1/2 tablespoon cacao powder
1/2 tablespoon melted coconut oil
1 teaspoon maple syrup
1/2 teaspoon baking powder
1/4 cup soy milk
TO MAKE:
- Mash the banana and mix together with the syrup, milk, and coconut oil;
- Whisk the oat flour, cacao powder and baking powder together separately, then pour the dry mix into wet, stir to combine well;
- Heat a little coconut oil in a medium nonstick pan, pour all the batter in to form one big pancake, cook over medium-low heat;
- Wait till the up side starts to bubble, flip, and cook for another 3-4 minutes or until cooked through;
- Top with preferred toppings, enjoy!
