Can steaks grow out of the ground? As a matter of fact, they can. Compared to roasted whole cauliflower, cauliflower steaks are more flavorful, take less time to cook, and look much more festive! They go perfectly with some refreshing and zingy chimichurri sauce.
Chimichurri Sauce -
1/2 cup olive oil
2 tablespoon red wine vinegar
1/2 cup chopped parsley
1/2 cup chopped cilantro
3 cloves garlic, minced
3/4 teaspoon dried oregano
This is another easy one-pan meal, the turmeric sauce I made to use on the cauliflower steaks not only compliments their natural flavors but also gives them a vibrant golden color. These tender, juicy, savory, and aromatic "steaks" can be eaten alone or, I love to serve them on a bed of creamy hummus for some protein and another layer of texture and flavor.

INGREDIENTS:
1 head cauliflower
3 tablespoon olive oil
1/2 tablespoon coconut amino

1 teaspoon garlic powder
1/2 teaspoon sweet paprika
1/2 teaspoon sweet paprika
1/2 teaspoon turmeric
1/2 cup olive oil

TO MAKE:
- Preheat the oven to 395°F;
- Wash and cut cauliflower into about 1/2 inch thick “steaks”;
- In a large frying pan, heat a drizzle of olive oil and sear the cauliflower steaks for about 3-4 minutes on each side, till golden brown;
- Meanwhile, whisk together the olive oil, coconut amino, cumin, paprika, garlic powder and turmeric, brush the sauce generously on the seared cauliflower steaks, then transfer onto a baking sheet lined with parchment paper;
- Bake the cauliflower for 25 - 30 minutes till cooked through;

- In the meantime, prepare the chimichurri sauce, hand chop (DO NOT BLEND, they're not supposed to be mushy) all the fresh herbs then mix all ingredients in a bowl, let it sit for at least 10 minutes before use to release all the wonderful flavors;
- Serve the cauliflower steaks with chimichurri sauce with your choice of either hummus or grains. Enjoy!
