Is there anything that cauliflowers cannot be? Let me know when you think of one but I sure have been able to turn cauliflowers into whatever I craved - pizzas, fried rice, pasta, and now of course "wings"!
There are so many different flavor options for "wings" but Korean style BBQ is definitely my favorite, I find the combo of sweet and spicy just irresistible. I'm not gonna lie to you though, the preparation process for this one is doomed to be a little messy, mainly the battering step, and even the eating part too if you go very generously on the sauce (which I highly recommend btw). Oh well, life is messy and so are lots of the most delicious foods, isn't that why we call them finger-licking good?!
For serving, it couldn't be easier for this one, just pick them up straight from the tray with your hands and start munching ;) Or, I find the sweet, spicy, and sticky sauce on these "wings" go gorgeously well with rice, prepare a little salad on the side and you got yourself a full meal.

INGREDIENTS:
1 head cauliflower
1 cup chickpea flour
1 cup soy milk or other plant milk of choice
1 tablespoon olive oil
2 teaspoon garlic powder
2 teaspoon paprika powder
Sweet & Spicy Korean BBQ Sauce
1/2 cup ketchup
2 tablespoon tamari/soy sauce
1 tablespoon coconut amino
2 tablespoon brown sugar
1 tablespoon sriracha sauce, adjust based on how spicy you want it
2 teaspoon onion powder
1 teaspoon Korean style red pepper mix, or regular red pepper powder
1 tablespoon olive oil
TO MAKE:
- Preheat the oven to 400°F;
- Wash the cauliflower and trim off the leaves and thick stem, cut it into small florets;
- In a large bowl, whisk together all the batter ingredients till you reach a thick batter consistency;
- Dip each floret into the batter to coat, shake off the excess batter, and place on a large baking tray lined with parchment paper, repeat till all the florets are coated;
- Bake for 20 minutes, flip halfway through;
- Meanwhile, in a small bowl, whisk together the BBQ sauce ingredients;
- Brush the baked cauliflower florets generously with the sauce, lower the oven to 375°F and return back to the oven for another 20 minutes;
- Sprinkle on some sesame seeds and enjoy!
