I'm here to steal a pizza of your heart with this recipe ;) What's the best food for Valentine's Day? Pizza. What's better than pizza? Heart-shaped pizza! What's even better than heart-shaped pizza? Pink heart-shaped pizza!
Ok I'll stop answering my own questions now. But seriously guys this would be a second dynamite on your V day (the first dynamite is obviously YOU). Not only does it look super cute and on theme, it's also incredibly healthy and easy to make! The crust is beet falafel and calls for only 3 main ingredients.
For toppings, I used a vegan cream cheese that's made of sunflower seeds, quick pickled onions, avocados, carrots cut into heart shapes, and fresh basils.

INGREDIENTS:
1 large beetroot
1 can chickpea
1 cup oat flour, or other flour of choice
1 teaspoon garlic powder
1 tablespoon olive oil
For the Pickled Onion -
1/2 red onion
1/2 cup apple cider vinegar
2 garlic clove, minced
2 tablespoon maple syrup
1/2 cup hot water
3-5 peppercorn, optional
TO MAKE:
- Wrap the beetroot in aluminum foil and bake at 400°F for 45-50 minutes till cooked through, test with a fork, should be able to insert fairly easily;
- When the beetroot is cooled down enough to handle, peel and cut into cubes, blend together the beet, chickpeas, olive oil, garlic powder till very smooth;
- In a large bowl, mix the beetroot and chickpea mixture with the oat flour, knead till you reach a dough texture;
- Shape the dough into a heart shape crust, rub a little bit of olive oil on your hands so the dough doesn't stick to your hands;
- Bake at 395°F for 30 minutes;
- Spread your choice of vegan cream cheese, top with sliced avocados, pickled onions, carrots and basil leaves. Enjoy!
